Main Courses

Peppered Pork on Rice

Preparation time: 30 minutes Number of servings: 4

Ingredients:

1½ lb. boneless pork loin
2 cloves garlic finely chopped
1 tbs. soy sauce (suit to taste)
4 tsp. cornstarch
2 tsp. sugar
½ tsp. salt
1/8 tsp. crushed red pepper
2 tbs. vegetable oil
3 small green onions
1 large green pepper
1 large red pepper
18 oz. package of pork flavour soup mix
minute rice
water

Instructions:

Slice the pork in long, thin wide slices. Place garlic, say sauce, cornstarch, sugar, salt, crushed red pepper and vegetable oil in a skillet on med. heat. Mix. Add pork and increase heat. In a separate pot, cook the rice as per the direction on the package and, when nearly cooked, add the soup mix and stir. Meanwhile, back at the ranch, slice the onions and peppers into long, thin, wide slices (sound familiar?) and put in with the pork. Cook the pork until browned. Place the rice, when done, in a deep dish and place the pork / vegetables in top.

Santa Fe Chicken Sandwich 

Ingredients:

4 skinless chicken breast fillets
1 cup teriyaki marinade
¼ cup mayonnaise
¼ teaspoon paprika
¼ teaspoon curry powder
1/8 teaspoon cayenne pepper
pinch o' salt
4 hamburger buns
4 lettuce leaves
1 green pepper
sliced cheddar cheese

Directions:

Beat the crap out of the chicken with a mallet until it is about ½ inch thick.  Marinate it in the teriyaki marinade in a shallow bowl for at least an hour.

Preheat the grill to medium heat.  Meanwhile, prepare the sauce in a small bowl by mixing the mayonnaise, paprika, cayenne, curry and salt.

Grill the chicken for 5 - 8 minutes per side or until done.  Makes sense, eh?  If you feel like it, you can toast the buns in the oven or brown the faces in a frying pan.  Or just leave them.  It's a personal preference thing.

Spread a tablespoon of sauce on the faces of each bun, top and bottom.  Then, place a lettuce leaf and a green pepper piece on it.  You might be able to make one pepper do for all four sandwiches.

Place a cooked piece of chicken on each of the sandwiches, some cheddar cheese and top it all off with the top of the bun.  It makes four sandwiches so make sure you have enough mouths to consume it all.  Enjoy.

Desserts

Butter Icing

Ingredients:

4 tbsp butter
1½ cup icing sugar
A pinch of salt
1-2 tablespoons milk, water or juice
1
teaspoon vanilla

Instructions:

Mix ingredients together until smooth.  Spread it on something.

Chocolate Fudge

Ingredients:

500 g icing sugar
½ cup cocoa
¼ teaspoon salt
¼ cup milk (plus 1 additional tablespoon)
1 teaspoon vanilla
½ cup soft butter

Directions:

Blend all the ingredients, except the butter, in a microwavable bowl.  Add the butter.  Mix it thoroughly.  Microwave on high for 2 minutes.  Beat with an electric mixer for about 1 minute or until smooth.  Pour into a buttered 9 x 9 pan and refrigerate until set.  Cut and serve.

Microwave Brownies

Start with:

6 tbsp of butter
¼ cup of cocoa

Melt in microwave for 30 seconds

Add in:

1 cup of sugar
2 eggs
1 teaspoon of vanilla
¼ teaspoon of salt
1 cup flour
A splash of milk

Cook for 5 minutes on high in microwave in a glass baking dish.

Molasses Cookies

Ingredients:

2 cups flour
1 cup sugar
¾ cup butter or margarine, softened
¼ cup molasses
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ginger
½ teaspoon nutmeg
¼ cloves
⅛ allspice

Instructions:

Preheat oven to 375 degrees.  In a large bowl, combine all the dry ingredients and mix.  In a second large bowl, cream together butter, egg and molasses.  Add the dry ingredients a bit at a time and beat until smooth.  Shape dough into 1 inch (2.5 cm) balls.  Roll in granulated sugar and place 2 inches (5 cm) apart on an un-greased cookie sheet.  Bake for 9 - 11 minutes.  Cool on wire racks.  Very tasty!

Sandra's Chocolate Chip Cookies

Ingredients:

1 cup flour
1 cup chocolate chips
½ cup margarine
½ cup packed brown sugar
¼ cup white sugar
1 egg
1 teaspoon vanilla
½ teaspoon baking soda
½ teaspoon salt

Instructions:

Cream together margarine and the sugars.  Add egg and vanilla.  Beat until smooth.  Stir in flour, baking soda and salt.  Stir in chocolate chips.  

Drop by teaspoon on un-greased sheet 2 inches ( 5 cm) apart.  Bake at 375 degrees for 8-10 minutes or until light brown.

Makes around 2 dozen cookies.

 

Drinks

Hot Chocolate

Ingredients:

¼ cup water
2 tablespoons cocoa
2 tablespoons white sugar
1
½ cups milk
¼ teaspoon vanilla extract
whipped cream topping

Directions:

Combine water, cocoa and sugar in a measuring cup (with a 2 cup capacity or larger).  Microwave the mixture on high for 30 seconds or until hot.  Stir well to create the chocolate syrup.

Add milk to the syrup and microwave for 90 seconds or until hot.  Add vanilla extract and serve.  Top with whipped cream.
